Breakfast has to be my favorite meal. You can make so many scrumptious goodies, like stuffed french toast, cinnamon rolls, waffles, and in this case pancakes. Monday morning I made a Monson family tradition breakfast. Swedish Pancakes. Yummy, thin pancakes similar to 49ers. You'll definitely be eating several of these guys. Swedish pancakes are super easy to make, using just 3 ingredients (the other 2 ingredients are optional). Plus, they are delicious. Win-win for everyone. The first picture is how thin the pancake should be, it is a very thin batter. I tend to roll them up with sugar and butter, but others in my family will eat them like normal pancakes. You can use maple syrup, white sugar, and applesauce for a sweetener.

Swedish Pancakes
Yield: A lot
Time: 20 minutes
Ingredients:
6 eggs
1 C. milk
1/2 C. flour
Directions:
Mix all ingredients in a large bowl using an electric hand mixer. Pour onto griddle (350 degrees) making a thin, large pancake.. (I normally make my pancakes 8 inches in diameter). Eat up!
