I love fall. Bonfires, warm sweatshirts, boots, and pumpkin patches. This is definitely a fall breakfast treat. I looked at one of my blogs I love, Brown Eyed Baker, and found Baked Oatmeal. Perfect for a fall morning. You'll love it.
This oatmeal has ingredients that you should already have on hand, so you won't need to be running out to the store. The added walnuts give this breakfast treat a crunch (plus a little protein) and the raisins a touch of sweetness. The best part, it is easy to make! Mix & bake. That's it. You can store it for up to 5 days, so if you need a quick breakfast, this is definetly your go-to meal.

Baked Oatmeal
Yield: 4 servings
INGREDIENTS:
2 cups uncooked oats
½ cup packed light brown sugar
1/3 cup raisins (or dried fruit of your choice)
1 tablespoon chopped walnuts (or nut of your choice)
1 teaspoon baking powder
1½ cups milk
½ cup applesauce
2 tablespoons butter, melted
1 large egg, beaten
Cooking spray
DIRECTIONS:
1. Preheat oven to 375°.
2. Combine the first 5 ingredients in a large bowl. Combine the milk, applesauce, butter, and egg in a separate bowl. Add milk mixture to oat mixture; stir well. Pour oat mixture into an 8-inch square baking dish coated with cooking spray. Bake for 20 minutes. Serve warm with a pinch of cinnamon.
