My sister introduced me to this mug cake. Um, yeah. It was like eating a chocolate molten cake., but gluten-free and healthy. It takes 5 minutes to make and uses honey as a sweetener. Oh, one more thing, you eat this for breakfast. Isn't it great when you can eat cake for breakfast and not feel bad about eating it? Of course, I just had to add Hershey's kisses to this recipe, which I will let you know made it taste like heaven in a mug.

Lydia Gluten-Free Chocolate Mug Cake Yield: One mug of deliciousness Ingredients: 3 T. coconut flour or almond flour (I used almond flour) 3 T. cocoa powder 2 T. honey 2 T. oil (I used coconut oil) 1 egg 1 t. vanilla extract 1 T. coconut or almond milk 2 T. 70% cocoa chocolate pieces (I substituted 8 hershey kisses) Directions: 1. Put all of the dry ingredients in a mug or bowl. Mix 2. Add the wet ingredients. Mix 3. Microwave for 2 minutes. BOOM. Chocolate cake. For breakfast. I have a little obsession with doughnuts. It doesn’t really matter if my donut has chocolate icing or white icing (but I do prefer white) or if it has sprinkles or not (I prefer sprinkles), I’ll eat it. Thus, I’m giving you 5 different recipes to try out. You can find so many donut recipes it's a little scary! We live in a doughnut-loving world, guys.

Can you guys believe Christmas Eve is tomorrow? I can't. Anyways, you can't have Christmas without sugar cookies... no way. Sugar cookies are light, fluffy and sweet. Using cookie cutters make them festive and fun and coloring your frosting can add some color (and sugar). I cut my sugar cookies into reindeers, trees and snowmen. Here are some tips I've learned with making sugar cookies:
Lydia Sugar Cookies Yield: 5 dozen Ingredients: 1 1/2 cups butter, softened 2 cups white sugar 4 eggs 1 teaspoon vanilla extract 5 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon salt Directions: 1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight). 2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. 3. Place cookies 1 inch apart on ungreased cookie sheets. 4. Bake 6 to 8 minutes in preheated oven. Cool completely. Click here for Sugar Cookie icing |
